"Last night tried the koji rice dry aging cheat. Coated ribeye with koji rice and left uncovered in fridge for 48 hrs, then 2 hrs on 140F in sous vide and Searzall mayo sear. Texture was excellent and flavors really popped. Excited to try a 72 hr koji rice next!"Read on Twitter
